TWI – Veggie a Go Go

I was SO PUMPED about this week! I had a tough week as far as tracking went, but I was very aware of what went in my mouth. I know the whole “if you bite it, you write it” rule, but I think sometimes if I am having a stressful week and don’t track, I become hyper-aware due to guilt. So maybe it worked in my favor.

The big surprise from me and B? We’ve gone vegetarian! Saturday was day one of no meat. If you know me, you know I didn’t eat meat for 18 years (age 3 til 21) except when forced to “try” at dinner (Mommers… I’m sorry you had to deal with me!) so it’s not a huge change. I wasn’t an insane meat fan anyway- I won’t really miss the chicken, but I will miss meatballs and bacon.

But Big Daddy? He’s a typical meat-loving Hoosier. I don’t know that he’s gone a healthy 36 hours without meat while I’ve known him. So I was shocked when he proposed this. But he’s learning a lot in culinary school that’s spurred him to do his own research, and he’s started to feel strongly about the vegetarian lifestyle. Well actually, the vegan lifestyle more specifically. But that will be nearly impossible while he’s in culinary school, so that’s on hold. Vegetarianism is step one. I am so proud of him! As of this AM he has lost six pounds- since SATURDAY. But we’re not doing this to lose weight. It’s more about health. Health first, weight second, not the other way around.

I’m sure I’ll go into this more and more as we become cooler vegetarians. We bought a vegan cookbook to try- last night we had beet, carrot and sweet potato latkes! Yum!!!

Oh, and because we all like pictures… here’s what happened last week in the good ole 50+ community… our cornfield got cut down.

This has really helped my allergies. ((sarcasm.))

The above pictures were taken on different days. I do really love our view. Although I’m scared being outside at night. There are all sorts of critters in the field, corn or not. And there are also coyotes due to the woods behind the house…

Fun facts- through those woods would be Tony Dungy‘s old house (from when he lived here… not sure who occupies it now.) Also right past that break in the woods on the left is a huge house… it used to belong to Jim Irsay, but when he and his wife divorced she kept it. The field next to our house was their property… it was a horse farm, but the ex-wife apparently sold the land to developers. It hasn’t been developed yet though, because clearly that isn’t going too well for anyone. (I hope this is all true… it’s what Big Daddy told me so we have to hold him to it.)

    My husband and I have committed to eating at least 3-4 veggie only/no meat meals for dinner every week. It saves a lot of money not having to buy meat all the time (although we really weren’t big meat eaters in our house to begin with and usually we save eating meat for when we eat out). We are both on Weight Watchers (I’m up to 10 pounds lost!) and so veggie dinners make sense and really help keep us on track after a big points weekend. We usually do them Sunday-Tuesday because our weigh-in day is Wednesday. I have pinned a ton of really yummy veggie recipes on pinterest.

    It is put out by the Madison, WI area CSAs, but it is useful to the general midwest. It has all the veggies grown in the area and includes recipes (with other seasonal ingredients), how to clean, cut/prepare and store certain veggies. I am going to try to start doing more meal planning out of it because it has a TON of recipes. I really love all the info in the book and it’s only $13!

  • I can’t wait to hear how vegetarianism goes for you guys! My hubs is definitely a meat and potatoes guy, I could go days without realizing I haven’t eaten meat but he’s got to have his steak every few days.
    Hope you share some yummy recipes with us. :)

  • I would love to do that. We’ve cut out red meat in our home, but that is as far as we have gone. I just bought WW’s new Fruits and Veggies Cookbook (it was on sale at my meeting). I’m looking forward to busting out a few of the recipes. I’ve already made one without knowing it…Squash Soup with Apples and Leeks.

    I’m really interested to follow along your vegan/vegetarian plan. I’ve been meaning to read Skinny Bitch for a long time now & to try it out myself… but then I get all drunk & want a bacon,egg & cheese and it’s all over. ;)

    If you had asked me pre-pregnancy I could’ve gone without meat for the rest of my life, HOWEVER with pregnancy came a huge craving for red meat…and it never left! I have often thought about giving it up for good because of the health benefits, but I don’t think I’m ready just yet. Good for you guys. I am so jealous of your view, it reminds me so much of the house I grew up in.

  • Great job on the weight loss and life changes! Since we moved to Sweden we are mostly red meat free since it is to expensive and my husband is none to happy about it but I am fine with it! In college I was a vegetarian for about a year and I can say it did make ummm bathroom time much more regular with all the extra veggies I was eating! :)
